Ingredients

1 cup cottage cheese

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon olive oil

2 tablespoons chopped fresh herbs (optional)


Instructions

1. In a mixing bowl, combine cottage cheese, flour, baking powder, and salt. Stir until a rough dough forms.

2. Knead lightly until the dough comes together and is no longer sticky.

3. Divide the dough into 4 to 6 equal portions and flatten into 1/4-inch thick discs.

4. Heat a non-stick or cast iron skillet over medium heat.

5. Brush each flatbread with olive oil and cook for 2–3 minutes per side, until golden brown.

6. Sprinkle with fresh herbs if desired and serve warm.

Notes

For a crispier crust, press the dough thinner and cook slightly longer.

Add garlic powder or onion powder to the dough for extra flavor.
