2 lbs beef chuck roast, cut into 1-inch cubes

1 medium yellow onion, diced

2 medium carrots, diced

1 cup peas (frozen or fresh)

2 celery stalks, diced

3 cloves garlic, minced

3 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

1/4 cup all-purpose flour

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)


Instructions

1. Pat beef dry, season with salt and pepper, and sear in olive oil until browned on all sides. Remove and set aside.

2. In the same pot, melt butter. Add onion, carrot, and celery. Sauté until soft.

3. Stir in garlic and tomato paste. Cook until fragrant, about 1 minute.

4. Sprinkle flour over the vegetables. Stir to coat and cook for 2 minutes.

5. Slowly pour in beef broth while stirring to create a smooth sauce.

6. Add Worcestershire sauce, thyme, rosemary, and return beef to pot.

7. Cover and simmer for 1.5 to 2 hours, until beef is fork-tender and sauce thickens.

8. Stir in peas and adjust seasoning with additional salt or pepper if needed. Let filling cool slightly.

9. Transfer filling to a baking dish. Cover with puff pastry, trim edges, and crimp.

10. Brush pastry with egg wash.

11. Bake at 400°F (200°C) for 25–30 minutes or until golden brown.
