Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 tablespoon ground cinnamon
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups peeled and chopped apples
1/4 cup granulated sugar (for swirl)
1 teaspoon cinnamon (for swirl)
1/2 cup powdered sugar (for glaze)
1 tablespoon milk (for glaze)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
3. In another bowl, beat the eggs, brown sugar, and granulated sugar. Add milk, oil, and vanilla extract, and mix well.
4. Combine the wet and dry ingredients just until blended.
5. Fold in the chopped apples gently.
6. Pour half of the batter into the prepared loaf pan.
7. Mix 1/4 cup sugar and 1 teaspoon cinnamon in a small bowl, and sprinkle half over the batter.
8. Add the remaining batter, then sprinkle the rest of the cinnamon sugar mixture on top.
9. Use a knife to swirl the cinnamon sugar into the batter gently.
10. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
11. Cool in the pan for 10 minutes, then transfer to a wire rack.
12. Whisk powdered sugar and milk to make the glaze, and drizzle over the cooled bread.
