Ingredients
450g boneless turkey breast
100g fresh spinach
75g feta cheese
100g cream cheese
2 garlic cloves, minced
4 slices cooked bacon, chopped
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh rosemary
Instructions
1. Sauté garlic in olive oil until fragrant. Add spinach and cook until wilted. Remove from heat and stir in cream cheese, feta, and half the bacon.
2. Butterfly the turkey breast, open like a book, and pound to even thickness.
3. Spread stuffing over the turkey, roll tightly, and secure with kitchen twine. Season with salt, pepper, and rosemary.
4. Sear the turkey in olive oil until browned on all sides.
5. Transfer to oven at 375°F (190°C) and roast for 35–45 minutes until internal temp is 165°F (74°C).
6. Let rest 10 minutes, then slice and serve.
