2 cups fresh or frozen cranberries

1 cup granulated sugar

1 1/2 cups semi-sweet or dark chocolate, chopped or chips

2 tablespoons butter or coconut oil


Instructions

1. In a saucepan, combine cranberries, sugar, orange juice, orange zest, and cinnamon. Simmer over medium heat, stirring occasionally, for 10–12 minutes until the cranberries burst and the mixture thickens.

2. Remove from heat and stir in vanilla extract. Let the cranberry sauce cool completely.

3. Spoon the mixture into silicone molds or onto a parchment-lined tray, forming small rounds (2 tablespoons each). Freeze for 1–2 hours until firm.

4. Melt the chocolate and butter (or coconut oil) using a double boiler or microwave in short bursts, stirring until smooth.

5. Dip the frozen cranberry discs into the melted chocolate, letting the excess drip off. Place on parchment paper.

6. Chill in the fridge until the chocolate hardens.
