1 tablespoon cornstarch
1 teaspoon sesame oil
1 tablespoon brown sugar
1 teaspoon fresh ginger, grated
2 tablespoons neutral oil (canola or avocado)
Instructions
1. Thinly slice flank steak against the grain. In a bowl, mix with soy sauce, cornstarch, and sesame oil. Let marinate while prepping other ingredients.
2. Bring a pot of water to a boil. Blanch broccoli for 2 minutes, then drain and set aside.
3. Heat neutral oil in a large pan or wok over high heat. Sear marinated beef in batches for 1–2 minutes until browned. Remove from pan.
4. In the same pan, sauté garlic and ginger for 30 seconds. Add oyster sauce, soy sauce, brown sugar, and a splash of water. Simmer until slightly thickened.
5. Return beef and broccoli to the pan. Toss everything to coat in sauce. Cook another 2–3 minutes until hot and glossy.
