Ingredients
1 can chickpeas, drained and rinsed
1 cup cucumber, diced
1/2 cup dried cranberries
1/4 cup red onion, finely chopped
2 tablespoons fresh dill, chopped
4 ounces feta cheese
1/3 cup Greek yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1/4 teaspoon black pepper
1/8 teaspoon salt
Instructions
1. Drain, rinse, and pat the chickpeas dry so the dressing stays creamy.
2. Dice the cucumber, finely chop the red onion, and chop the fresh dill.
3. In a medium bowl, mash or blend the feta, Greek yogurt, olive oil, lemon juice, garlic, black pepper, and salt until creamy.
4. Add the chickpeas, cucumber, dried cranberries, red onion, and dill to a large bowl.
5. Spoon the creamy feta dressing over the salad and toss gently until everything is evenly coated.
6. Chill for 20 to 30 minutes for the best flavor.
7. Stir once more before serving, then top with extra dill or feta if desired.
Notes
