Ingredients

300g chicken breast, thinly sliced

2 medium zucchini, sliced into half-moons

2 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or brown sugar

1 teaspoon chili flakes (or 1 fresh red chili, sliced)

2 green onions, sliced

1 tablespoon sesame seeds (optional)

1 tablespoon neutral oil (canola or avocado) for cooking


Instructions

1. Slice the chicken into thin strips, zucchini into half-moons, mince the garlic, and chop the green onions.

2. Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook for 5–7 minutes until browned and cooked through. Remove and set aside.

3. In the same pan, add zucchini and sauté for 3–4 minutes until just tender but still crisp. Add garlic and cook for 1 more minute.

4. In a bowl, whisk together soy sauce, sesame oil, honey, and chili flakes.

5. Pour sauce over zucchini. Stir to coat.

6. Return chicken to the pan. Toss everything together and cook for another 2–3 minutes until fully coated and heated through.

7. Top with green onions, sesame seeds, and extra chili if desired. Serve immediately.

Notes

For extra flavor, marinate the chicken in a tablespoon of soy sauce and garlic for 15 minutes before cooking.

Keep the heat high during cooking to maintain the zucchini’s texture.

Double the sauce if you prefer extra for drizzling over rice or noodles.
