Ingredients

2 cups cooked shredded chicken

2 cups mixed vegetables (frozen peas, carrots, corn)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 ½ cups shredded cheddar cheese

2 cups biscuit mix

1 cup milk

4 tablespoons butter, melted

2 tablespoons chopped chives (optional)

Instructions

1. Preheat oven to 375°F and grease a 9×13-inch baking dish.

2. In a large bowl, combine shredded chicken, cream of chicken soup, chicken broth, and mixed vegetables. Mix well and pour into prepared baking dish.

3. In a separate bowl, mix biscuit mix, milk, and half of the cheddar cheese until just combined.

4. Drop spoonfuls of the biscuit dough evenly over the chicken filling.

5. Sprinkle remaining cheese on top and drizzle melted butter over everything.

6. Bake uncovered for 35–40 minutes or until the biscuit topping is golden and cooked through.

7. Let rest for 5 minutes before serving. Garnish with chopped chives if desired.

Notes

Use rotisserie chicken for a quick prep shortcut.

If using fresh vegetables, lightly sauté them before mixing into the filling.

Let the casserole sit a few minutes after baking to help it set and serve more cleanly.
