Ingredients

1 lb chicken breast or thighs

1 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

1 cup fresh strawberries, diced

1/4 cup red onion, finely chopped

1/3 cup cucumber, diced

1 jalapeño, finely chopped

2 tbsp fresh mint, chopped

1 tbsp lime juice


Instructions

1. Cut the chicken into bite-sized cubes. Toss with olive oil, paprika, garlic powder, salt, and pepper. Let marinate for 10 minutes.

2. In a bowl, mix the diced strawberries, red onion, cucumber, jalapeño, mint, and lime juice. Set aside.

3. Heat a skillet over medium-high. Add chicken in a single layer. Cook 3–5 minutes per side until golden and cooked through.

4. Let the chicken rest for a few minutes after cooking.

5. Spoon chicken into a serving bowl. Top with strawberry-jalapeño mint salsa. Garnish with lime wedge and fresh mint. Serve immediately.

Notes

Use chicken thighs for extra juicy texture, or breasts for leaner protein.

Adjust the jalapeño for more or less heat depending on your taste.
