Ingredients

1 chicken breast

1 ripe avocado

1/2 cup shredded mozzarella or Monterey Jack cheese

1/4 tomato, diced

2 tablespoons red onion, diced

1 tablespoon chopped cilantro

1 teaspoon lime juice

2 slices sourdough or artisan bread

1 tablespoon butter or mayo

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Mash the avocado in a bowl and mix with lime juice, salt, chopped tomato, red onion, and cilantro. Set aside.

2. Season the chicken breast with salt and pepper. Grill or pan-sear over medium heat until golden brown and fully cooked. Slice it into sandwich-ready pieces.

3. Place one slice of bread on a clean surface. Add a layer of cheese, followed by chicken slices, avocado mixture, and more cheese if desired. Top with the second slice of bread.

4. Spread butter or mayo on the outsides of the sandwich. Grill in a skillet over medium heat until the bread is golden and the cheese has melted, flipping once.

5. Let rest for a minute, then slice and serve warm.

Notes
