Ingredients

115g melted butter

120g brown sugar

80g granulated sugar

160g pumpkin puree

1 teaspoon vanilla extract

150g all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

120g chocolate chips


Instructions

1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.

2. In a large bowl, whisk together the pumpkin puree, melted butter, brown sugar, granulated sugar, and vanilla until smooth.

3. Sift in the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Gently fold until just combined—do not overmix.

4. Fold in most of the chocolate chips, reserving a small amount to sprinkle on top.

5. Pour the batter into the prepared pan and smooth the top. Sprinkle remaining chocolate chips over the batter.

6. Bake for 28–32 minutes until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.

7. Let cool for 20 minutes in the pan before slicing into squares. Serve warm or at room temperature.

Notes

Make sure your pumpkin puree is not too watery to avoid soggy blondies.

For extra gooeyness, slightly underbake and let them set while cooling.

Feel free to switch up chocolate chips for white, dark, or even cinnamon chips.
