Ingredients

1 head cauliflower

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Slice the cauliflower head into ¾-inch thick steaks. Trim the sides to form flat, stackable shapes.

2. Brush both sides of the slices with olive oil and season with salt and pepper.

3. Roast in a preheated oven at 425°F (220°C) for 20–25 minutes, flipping halfway, until golden brown.

4. Remove from oven and sprinkle cheese on one cauliflower slice. Top with another to form a sandwich.

5. Heat a skillet over medium. Add a little olive oil or butter and cook each sandwich for 2–3 minutes per side until golden and the cheese is melted.

6. Garnish with parsley and serve warm.

Notes

Use the inner part of the cauliflower head for the best structural slices that won’t fall apart.

Don’t overload the sandwich with cheese or it may ooze out while cooking.

For a spicier twist, add a few slices of jalapeño or use pepper jack cheese.
