Ingredients

1 lb beef sirloin or steak tips

9 oz cheese tortellini

1 cup shredded provolone cheese

1 cup heavy cream

1/2 cup beef broth

2 cloves garlic, minced

1/2 small onion, diced (optional)

2 tbsp butter

1/2 tsp salt

1/2 tsp black pepper

1 tbsp chopped fresh parsley or chives (for garnish)

Instructions

1. Heat a large skillet over medium-high heat, add oil, and sear the beef until browned on all sides. Remove and set aside.

2. In the same pan, melt the butter. Add diced onion (if using) and minced garlic. Sauté until soft and fragrant, about 2-3 minutes.

3. Pour in the beef broth and bring to a simmer. Reduce heat to low, add heavy cream and provolone cheese. Stir until the cheese is fully melted and sauce is smooth.

4. In a separate pot, cook the tortellini according to package instructions. Drain and set aside.

5. Return the beef to the sauce and let it simmer for 2-3 minutes. Then fold in the cooked tortellini and mix until fully coated.

6. Season with salt and black pepper to taste. Garnish with fresh herbs and serve hot.

Notes

Use freshly shredded provolone for best melting and flavor results.

Don’t overcook the tortellini—aim for just tender to keep them intact.

Add a splash of broth or cream when reheating leftovers to keep the sauce creamy.
