Ingredients

4 tablespoons butter

1 small onion, diced

2 cloves garlic, minced

1/2 cup celery, diced

1/2 cup carrots, diced

1/4 cup all-purpose flour

1 1/2 cups seafood stock or chicken broth

3/4 cup heavy cream

1 teaspoon Old Bay seasoning

1/2 teaspoon dried thyme

1 tablespoon fresh parsley, chopped

1/2 pound large shrimp, peeled and deveined

1/2 pound bay scallops

1/2 cup lump crab meat

1 packet Cheddar Bay Biscuit Mix

1/2 cup milk

1/2 cup shredded cheddar cheese

Instructions

1. In a large oven-safe skillet, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Cook until softened and fragrant, about 5–7 minutes.

2. Stir in the flour to form a roux. Cook for 1 minute, then gradually whisk in the stock until smooth.

3. Stir in the heavy cream, Old Bay seasoning, thyme, and parsley. Simmer for 5 minutes until slightly thickened.

4. Add shrimp, scallops, and crab meat. Cook gently for 3–4 minutes, just until the seafood is cooked through. Remove from heat.

5. In a bowl, mix the biscuit mix with milk and cheddar cheese until combined.

6. Drop large spoonfuls of biscuit dough over the seafood mixture.

7. Bake in a preheated 400°F oven for 15–18 minutes until biscuits are golden and cooked through.

8. Optional: brush the biscuits with garlic butter before serving.

Notes

Do not overcook the seafood—it will finish cooking in the oven.

Use an oven-safe skillet to save on cleanup.

Fresh parsley and a garlic butter brush elevate the final presentation.
