Ingredients

3/4 cup pumpkin puree

1 1/2 cups all-purpose flour

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

1 large egg yolk

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon nutmeg

1/2 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)


Instructions

1. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, cardamom, ginger, cloves, and nutmeg.

2. In a large bowl, beat the butter with brown sugar and granulated sugar until light and fluffy.

3. Add pumpkin puree, egg yolk, and vanilla extract. Mix until fully combined.

4. Gradually stir in the dry ingredients until a soft dough forms.

5. Cover and chill the dough for at least 30 minutes.

6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

7. Scoop dough into balls, place on sheet, and flatten slightly.

8. Bake for 10–12 minutes, until edges are set and centers are soft.

9. Allow cookies to cool completely.

10. In a small bowl, whisk powdered sugar and milk to form a glaze. Drizzle over cookies and let it set before serving.

Notes

Chill the dough to prevent cookies from spreading too much.

Use pure pumpkin puree—not pie filling—for best results.

You can double the chai spice mix and store it in a jar for future bakes.
