Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar

½ cup unsalted butter, softened

2 large eggs

½ cup milk

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon cardamom

½ teaspoon ground ginger

¼ teaspoon ground cloves

⅛ teaspoon black pepper

Optional: ¼ cup chopped nuts or raisins


Instructions

1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.

2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and all chai spices.

3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

4. Add the eggs one at a time, then stir in the vanilla extract. Mix well.

5. Alternately add the dry mixture and milk into the wet mixture, beginning and ending with dry. Stir until just combined.

6. Fold in nuts or raisins if using.

7. Pour batter into the prepared pan and smooth the top.

8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

9. Let the cake cool completely before frosting with cream cheese frosting.

10. Dust the top with a little cinnamon or chai spice and slice into squares to serve.

Notes

For stronger chai flavor, steep a chai tea bag in the milk before adding.

Cream cheese frosting pairs best, but you can try a maple or vanilla glaze.

Don’t overmix the batter to keep the cake light and tender.
