4 tablespoons butter, softened
1 cup powdered sugar (for frosting)

Instructions
1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper. Lightly grease it.
2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In a large bowl, beat the eggs, granulated sugar, and brown sugar until thick and pale.
4. Stir in vanilla extract and vegetable oil until combined.
5. Fold in the grated carrots until evenly incorporated.
6. Add the dry ingredients to the wet mixture and stir gently until just combined.
7. Spread the batter evenly in the prepared pan and bake for 13–15 minutes or until the cake springs back when touched.
8. Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar.
9. Carefully peel off parchment paper and roll the cake up in the towel. Let it cool completely.
10. For the frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy.
11. Once the cake is cooled, unroll it gently and spread the frosting evenly over the surface.
12. Re-roll the cake (without the towel), wrap it in plastic wrap, and refrigerate for at least 1 hour before slicing.
