Description

Ingredients

2 cups shredded cooked chicken

2 cups pulled pork (pre-cooked or leftovers)

1 can diced tomatoes (14.5 oz)

1 can tomato sauce (8 oz)

1 cup BBQ sauce

1 cup corn (frozen or canned, drained)

1 cup lima beans or butter beans

1 medium onion, chopped

2 cloves garlic, minced

2 cups chicken broth

1 tablespoon brown sugar

1 teaspoon hot sauce (optional)

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a large pot or Dutch oven, heat a bit of oil over medium heat. Add chopped onion and garlic and sauté until soft and fragrant, about 3–4 minutes.

2. Stir in the diced tomatoes, tomato sauce, BBQ sauce, and brown sugar. Let the mixture simmer for a few minutes to blend the flavors.

3. Add the shredded chicken, pulled pork, corn, and lima beans. Pour in the chicken broth and stir to combine.

4. Reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally, until thickened and flavorful.

5. Season with salt, pepper, and hot sauce to taste. Simmer a few more minutes.

6. Serve hot, garnished with fresh herbs if desired.

Notes

For extra depth, use smoked pulled pork or BBQ rotisserie chicken.

This stew thickens as it sits—add more broth when reheating if needed.

Make it your own by adding chopped okra, sweet potatoes, or bell peppers.
