Ingredients
1 cup rolled oats
1 cup cottage cheese
3/4 cup milk
1 cup blueberries
1 tablespoon chia seeds
1 tablespoon honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 pinch salt
2 tablespoons shredded coconut
2 tablespoons chopped nuts
Instructions
1. In a medium bowl or large jar, stir together the cottage cheese, milk, honey, vanilla extract, cinnamon, and salt until well combined.
2. Add the rolled oats and chia seeds, then mix again until everything is evenly coated.
3. Fold in most of the blueberries, saving a few for topping if desired.
4. Cover and refrigerate overnight, or for at least 6 hours, until the oats are soft and the mixture is thickened.
5. Stir before serving, add a splash of milk if needed, then top with the remaining blueberries, shredded coconut, and chopped nuts.
Notes
Do not add too much liquid at the start, or the oats can turn loose and soupy by morning; it is better to stir in an extra splash of milk right before serving if needed.
