Ingredients
1 cup cooked rice
1 can black beans, drained and rinsed
1 cup corn kernels
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup cotija cheese or feta, crumbled
1/4 cup red onion, finely chopped
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup plain Greek yogurt
2 tablespoons fresh cilantro, finely chopped
1 tablespoon lime juice
1 clove garlic, minced
2 lime wedges, for serving
Instructions
1. Cook the rice until fluffy and set it aside to rest for a few minutes.
2. Heat olive oil in a skillet over medium heat, then add the black beans, corn, chili powder, cumin, paprika, salt, and black pepper. Stir and cook until warmed through.
3. In a small bowl, mix the Greek yogurt, cilantro, lime juice, and garlic until smooth and creamy.
4. Slice the cherry tomatoes, dice the avocado, crumble the cheese, and chop the red onion.
5. Divide the rice into serving bowls, then top with the black bean and corn mixture, tomatoes, avocado, cheese, and red onion.
6. Spoon the cilantro lime yogurt sauce over each bowl.

Notes
Do not add the yogurt sauce too early, or the bowl can lose its fresh texture and become watery before serving.
