Ingredients

1 pound breakfast sausage

2 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1/2 teaspoon salt

1 teaspoon black pepper

1 can (16.3 oz) refrigerated homestyle biscuits

1 cup shredded cheddar cheese

1 teaspoon dried parsley or fresh thyme (optional, for garnish)


Instructions

1. In a skillet over medium heat, cook the sausage until browned and crumbled. Do not drain the fat.

2. Add butter and let it melt. Stir in flour and cook for 1-2 minutes to form a roux.

3. Slowly whisk in milk, stirring constantly, and cook until thickened. Season with salt and pepper.

4. Preheat oven to 375°F and grease a 9×13-inch baking dish.

5. Cut biscuits into quarters and place half in the bottom of the dish.

6. Pour half the gravy over the biscuits, then layer the remaining biscuits and top with remaining gravy.

7. Sprinkle cheddar cheese on top evenly.

8. Bake uncovered for 25-30 minutes until bubbly and golden.

9. Let rest 5-10 minutes before serving.

10. Garnish with parsley or thyme if desired.

Notes

For a make-ahead version, assemble the night before and refrigerate overnight.

You can swap cheddar with cheddar-jack or pepper jack for extra flavor.

To freeze, wrap cooled portions in foil and freeze for up to 2 months.
