Ingredients

2 large chicken breasts, sliced into thin cutlets

1/2 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

3 cloves garlic, minced

3/4 cup chicken broth

1/4 cup fresh lemon juice

1 lemon, thinly sliced

3 tablespoons capers, drained

2 tablespoons fresh parsley, chopped


Instructions

1. Slice the chicken breasts into thin cutlets or pound them evenly, then season both sides with salt and black pepper.

2. Dredge each chicken piece lightly in flour and shake off any excess.

3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

4. Sear the chicken for 3 to 4 minutes per side until golden and cooked through, then transfer to a plate.

5. Reduce the heat to medium and add the garlic to the skillet, stirring for about 30 seconds until fragrant.

6. Pour in the chicken broth and fresh lemon juice, scraping up the browned bits from the pan.

7. Stir in the lemon slices and capers, then let the sauce simmer for 3 to 4 minutes until slightly reduced.

8. Add the remaining 2 tablespoons of butter and swirl until the sauce is glossy.

9. Return the chicken to the skillet and spoon the sauce over the top.

10. Simmer for 1 to 2 minutes more, then sprinkle with fresh parsley and serve warm.

Notes

Do not overcrowd the skillet while searing the chicken, or it will steam instead of developing that flavorful golden crust.
