Ingredients
500g chicken breast strips
2 eggs, beaten
1 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
2 cups oil for frying
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tablespoon sriracha or chili garlic sauce
1 tablespoon honey (optional)
1 tablespoon rice vinegar or lime juice
Instructions
1. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey (if using), and rice vinegar. Set aside.
2. Season the chicken with salt and pepper. Dip into beaten eggs, then coat thoroughly in cornstarch. For extra crunch, double-dip with egg and cornstarch.
3. Heat oil to 350°F in a pan or skillet. Fry chicken in batches for 4–5 minutes until golden brown and cooked through. Drain on paper towels.
4. Toss fried chicken with the prepared sauce in a large bowl. Coat evenly.
5. Garnish with chopped chives, green onions, or chili flakes. Serve hot with your favorite sides.
Notes
Use a wire rack instead of paper towels to keep chicken crispy.
You can substitute chicken with shrimp, tofu, or cauliflower for variation.
Sauce can be prepped ahead and stored in the fridge for up to 3 days.
