Description

This Baked Beef Enchilada Casserole is a quick dinner packed with layers of seasoned ground beef, enchilada sauce, tender tortillas, and melty cheese. It is an easy recipe for busy weeknights, cozy family dinners, and make-ahead meal prep, making it one of those food ideas you will want to keep on repeat.


Ingredients

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

2 cups enchilada sauce

8 corn tortillas

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sliced black olives

1 cup diced tomatoes

1/2 cup sour cream

2 tablespoons chopped fresh cilantro

1 jalapeño, sliced

1 lime, cut into wedges


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Cook the ground beef and diced onion in a skillet over medium heat until the beef is browned and the onion is soft, then drain excess grease.

3. Stir in the garlic, taco seasoning, and 1 cup of enchilada sauce, then simmer for a couple of minutes.

4. Spread a thin layer of enchilada sauce in the bottom of the baking dish.

5. Add a layer of corn tortillas, then top with part of the beef mixture and a sprinkle of both cheeses.

6. Repeat the layers until all ingredients are used, finishing with enchilada sauce and the remaining cheese on top.

7. Bake for 25 to 30 minutes, until hot and bubbly and the cheese is melted and lightly golden.

8. Let the casserole rest for 10 minutes before serving.

9. Top with black olives, diced tomatoes, sour cream, cilantro, jalapeño, and lime wedges if desired.

Notes

Do not add too much extra sauce between the layers, or the casserole can turn overly soft and fall apart when sliced.
