Ingredients

2 medium apples, peeled and diced

2 tablespoons granulated sugar

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg (optional)

1 teaspoon lemon juice

1 teaspoon cornstarch

12 egg roll wrappers

Oil for frying (vegetable or canola)

Powdered sugar for topping

Caramel sauce for drizzling (optional)


Instructions

1. Peel, core, and dice the apples into small cubes for even cooking.

2. In a medium saucepan, combine apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat for 5–7 minutes until apples soften.

3. Stir in cornstarch and cook for another minute until the mixture thickens. Let the filling cool slightly.

4. Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon apple filling near the center.

5. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Dab the top edge with water to seal.

6. Heat oil in a deep skillet to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden brown.

7. Drain on a paper towel-lined plate. Dust with powdered sugar and drizzle with caramel if desired. Serve warm.

Notes

Let the filling cool before wrapping to prevent tearing the wrappers.

For extra crispiness, avoid overstuffing each roll.

Use an air fryer for a lighter version: 370°F for 8–10 minutes, flipping halfway.
