Description

If you’re craving bakery-style indulgence without deep frying, this easy Apple Fritter Cake is the perfect treat. With juicy chunks of apple, warm cinnamon, a soft and moist cake base, and a sweet vanilla glaze, it’s a crowd-pleasing option for cozy brunches, weekend breakfasts, or comforting desserts. It’s an ideal recipe for fans of quick breakfast ideas, easy dessert recipes, or satisfying fall food ideas.

Ingredients

2 cups chopped apples (Granny Smith or Honeycrisp)

2 teaspoons ground cinnamon

1/3 cup brown sugar

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1/2 cup sour cream

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/4 teaspoon salt

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract (for glaze)

Instructions

1. Peel, core, and chop apples. Toss them in a bowl with brown sugar and cinnamon. Set aside.

2. In a large mixing bowl, cream butter and granulated sugar until light and fluffy.

3. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream.

4. In a separate bowl, whisk flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6. Grease a 9×13-inch baking dish. Spread half of the batter into the dish.

7. Layer with half the apple mixture. Repeat with the remaining batter and apples. Swirl lightly with a knife.

8. Bake at 350°F (175°C) for 40–45 minutes or until a toothpick inserted in the center comes out clean.

9. While the cake is still warm, whisk powdered sugar, milk, and vanilla to make a glaze.

10. Drizzle the glaze over the cake. Let it soak in before slicing and serving.

Notes

Mixing apple varieties (like Granny Smith + Fuji) gives a balanced flavor.

Don’t over-swirl the batter; you want visible apple layers.

Best served warm, but stores beautifully and reheats well.
