Ingredients
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted (divided)
3 packages (8 oz each) cream cheese, room temperature
1 cup granulated sugar
½ cup sour cream
3 large eggs
2 teaspoons vanilla extract
3 medium Granny Smith apples, peeled and diced
½ teaspoon ground cinnamon
¼ teaspoon nutmeg (optional)
½ cup brown sugar
½ cup all-purpose flour
¾ cup old-fashioned oats
½ cup chopped pecans
½ cup caramel sauce, for drizzling
Instructions
1. Preheat oven to 325°F (163°C). Prepare a springform pan by greasing it and lining the bottom with parchment paper.
2. Mix graham cracker crumbs with ¼ cup melted butter. Press mixture into the bottom of the pan to form the crust. Bake for 10 minutes, then cool.
3. In a large bowl, beat cream cheese until smooth. Add granulated sugar and beat until fluffy. Mix in eggs one at a time, followed by sour cream and vanilla extract. Pour mixture over the cooled crust.
