Ingredients

2 cups cooked chicken breast or thighs, diced

1 cup uncooked long grain white rice

4 oz cream cheese, softened

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 ½ cups shredded mozzarella cheese

¼ cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 ¾ cups chicken broth

2 tablespoons unsalted butter, diced

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1. Preheat oven to 350°F (175°C).

2. Lightly season diced chicken with salt and pepper, then sear in a skillet until lightly golden (not fully cooked).

3. In a large bowl, whisk together cream cheese, cream of chicken soup, sour cream, garlic powder, onion powder, and chicken broth until smooth.

4. Spread uncooked rice evenly in a 9×13-inch baking dish. Top with seared chicken.

5. Pour creamy sauce over rice and chicken. Stir gently to distribute evenly.

6. Sprinkle mozzarella and parmesan over the top. Dot with diced butter.

7. Cover with foil and bake for 45 minutes.

8. Remove foil and bake an additional 15–20 minutes until rice is tender and cheese is golden.

9. Broil for 2–3 minutes if you want a crispier top.

10. Let cool for 5 minutes, garnish with fresh parsley, and serve.

Notes

Use leftover rotisserie chicken to speed up prep.

To freeze: Cool completely and wrap tightly.
