1 lb ground beef
4 medium Yukon Gold potatoes, peeled and cut into chunks
1 small onion, diced
2 carrots, peeled and sliced
1 medium zucchini, chopped
3 cloves garlic, minced
1 cup beef broth
1 can cream of mushroom soup
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
2 tbsp butter
1 tbsp olive oil
1 tsp dried thyme
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Heat the olive oil in a large skillet over medium heat, then cook the ground beef until browned and crumbly. Drain excess grease if needed.
3. Add the onion, garlic, and butter to the skillet and cook until softened and fragrant.
4. Stir in the carrots, zucchini, thyme, paprika, salt, and black pepper, then cook for a few minutes.
5. Add the beef broth and cream of mushroom soup, stirring until the mixture is smooth and well combined. Simmer briefly.
6. Arrange the potatoes in the prepared baking dish in an even layer.
