Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup finely ground almonds
2 1/4 cups all-purpose flour
1/2 cup powdered sugar, for rolling
Instructions
1. In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy.
2. Add vanilla extract and salt, mixing to combine. Stir in the ground almonds.
3. Gradually mix in the flour until a dough forms.
4. Take about 1 tablespoon of dough, shape it into a log, and curve into a crescent.
5. Place shaped cookies on a parchment-lined baking sheet and chill for 30 minutes.
6. Preheat oven to 325°F (165°C). Bake for 15–18 minutes until edges are lightly golden.
7. Let cool for 5 minutes, then roll warm cookies in powdered sugar. Cool completely.
8. Dust with powdered sugar again before serving for a snowy finish.
Notes
Use blanched almond flour if you don’t have ground almonds.
Chill the shaped dough for best results and minimal spreading.
Cookies can be frozen for up to 2 months; thaw and re-roll in powdered sugar.
