Description
This 20-Minute One-Pot Creamy Cajun Sausage Pasta is a quick dinner packed with smoky sausage, tender pasta, and a rich, spicy cream sauce. It is an easy recipe for busy weeknights, perfect for dinner ideas, comfort food cravings, and fast food ideas when you want a cozy homemade meal without a lot of cleanup.
Ingredients
12 ounces smoked sausage, sliced
8 ounces rotini pasta
1 tablespoon olive oil
1 small onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 teaspoons Cajun seasoning
2 cups chicken broth
1 cup heavy cream
1 can diced tomatoes, drained
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large deep skillet or pot over medium-high heat. Add the sliced sausage and cook until browned on both sides.
2. Add the diced onion and bell pepper, then cook until softened. Stir in the garlic and Cajun seasoning and cook briefly until fragrant.
3. Pour in the chicken broth, heavy cream, and diced tomatoes. Stir everything together.
4. Add the rotini pasta and stir so the pasta is mostly covered by the liquid.
5. Bring the mixture to a gentle simmer and cook uncovered, stirring often, until the pasta is tender and the sauce has thickened.
6. Stir in the Parmesan cheese, salt, and black pepper until the sauce is smooth and creamy.
7. Finish with chopped parsley and serve hot.
Notes
Do not let the pasta boil too hard or the sauce can reduce before the noodles finish cooking, which may leave the final dish too thick.
